Mushroom Pasta FIlling

Equipment Needed

  • Heavy Bottom Pot

  • Food Processor

  • Sheet Tray

INGREDIENTS LIST

For The Filling

  • 1 Pound Cremini Mushrooms

  • 2 Pieces Shallots, finely chopped

  • 1 Clove Garlic, finely chopped

  • 3 Tablespoons Butter

  • Salt and Pepper to taste

METHOD

Start by chopping the Cremini Mushrooms into quarters and blend in a food processor. Melt the butter in a Heavy Bottom Pot and add in the Shallots and Garlic to sweat. Once translucent, add in the processed mushrooms and cook on medium low heat, stirring to make sure they don’t stick to the bottom of the pot. Once the mushrooms have released most of their moisture, (the steam coming off as they cook dissipates) season with salt and pepper. Transfer to a sheet tray and spread evenly to help cool down quickly. Transfer to a refrigerator and allow to completely cool. Once cooled, transfer to a piping bag and tie shut.
